Chef Wayne delivers EH training at No.7

Wayne Blything, who set up No.7 restaurant and Hokahnaya Inn & Conference Centre, alongside his wife Tess in 2014, facilitated a focused Environmental Health and Food Safety training session for Kick4Life’s social enterprise team. The session aimed to enhance food safety management systems and reinforce adherence to recognised hygiene and sanitation standards in line with Environmental Health requirements.

The training covered key areas including personal hygiene standards, prevention of cross-contamination, safe food storage and temperature control, cleaning and sanitation procedures, waste management awareness, and the importance of accurate food safety documentation.

Wayne also conducted a thorough kitchen assessment, providing feedback to the No.7 management team, highlighting opportunities to enhance routine food safety monitoring, how to reinforce critical control point (CCP) compliance, and strengthen staff accountability in maintaining hygiene and operational standards.

Wayne is in Lesotho with his family to support the ongoing operations of CHEF – the Catering, Hospitality & Education Foundation, a charity he founded with Tess which is helping Basotho entrepreneurs to establish and run their own catering businesses, supporting them towards achieving sustainable livelihoods.
